PDO AND PGI WINES FROM TRAMINER VARIETY FROM THE BLACK SEA REGION
Traminer is a white wine grape variety that grows very successfully in the Black Sea region. The moderate-continental climate, strongly influenced by the proximity of the Black Sea, with the characteristic breeze circulation, the relatively dry summer and the long and warm autumn, influence the development of specific characteristics of the variety in this region, making it suitable for PDO and PGI registration.
Early to mid-ripening variety: the grapes ripen in early to mid-September. It has medium growth, high fertility and gives an average yield. The average yield per hectare is about 700 - 800 kg. Resistant to low winter temperatures, but sensitive to drought. Relatively richer, humus-carbonate, sufficiently moisture-stored soils in the cooler, airy hilly terrains are suitable for it. The variety is not resistant to fungal diseases, it is attacked by downy mildew and oidium and in rainy autumn the grapes rot.
The bunch is small to very small (100 g), conical, sometimes winged, compact. The grains are small, oval, gray-pink and yellowish-red to reddish, covered with an abundant wax coating. The skin is thick and tough. The meat is juicy, sweet and aromatic.
Very aromatic, high-quality white dry, semi-dry and sweet wines and wine materials for sparkling wines are obtained from the grapes. Varietal wines are distinguished by a golden yellow color, high alcohol content and extract, and a strong sweet aroma with predominant notes of flowers and exotic fruits, which develops during aging. In cooler climates, and when the fruit is infected with downy mildew, botrytized grapes can produce extremely sweet wines with the rich aroma characteristic of the variety.
Its rich aroma makes it difficult to combine with food. This wine is always served well chilled, and smoked cheeses and tropical fruits such as orange, pineapple, mango or papaya make the best company.
With spices, it is good to emphasize ginger, curry, cinnamon or cloves. Another possible combination of Traminer wine is smoked cheeses. Smoked mozzarella and gouda are best for this wine.
Pretentious traminer is most successfully combined with smoked, salty and sweet foods. A combination with acidic dishes is unacceptable, as is that with delicately prepared poultry and seafood, because the wine will take over the dish.
A mandatory condition for serving Traminer is that the wine be well chilled. It can be safely summed up that there is no middle ground with Traminera - its aromas strain the senses, and its difficult combination with food pushes to two extremes - either hate or love at first sight.
